Sesame Peanut Soba Noodle Salad


Serves 4


Ingredients:


1 (8 oz) pkg of soba noodles

2 tsp extra virgin olive oil

1 medium onion, diced

5 garlic cloves, minced

1 (1”) piece of ginger, grated

1 cup shredded carrots

1 cup frozen green beans

½ cup frozen green peas


3 tsp extra virgin olive oil

3 Tbsp soy sauce

2 tsp pure maple syrup

2 Tbsp creamy peanut butter

2 tsp garlic-chile sauce

4 scallions, chopped

2 Tbsp toasted sesame seeds

2 avocados, sliced & tossed with lime juice


Directions: Cook the soba noodles in boiling water according to the pkg directions. Drain and rinse under cool water and set aside. Heat the oil in a skillet and add the onion, garlic and ginger. Saute for a couple of minutes. Add in the veggies and cook for 5-10 minutes or until the veggies are crisp-tender. Remove from heat. In a large mixing bowl, whisk together the oil, soy sauce, syrup, peanut butter, garlic-chile sauce, scallions and half of the sesame seeds. Stir in the noodles and veggies; toss to combine. Transfer to serving bowls and top with sesame seeds and avocado slices. Enjoy!
